My wife, who has just returned from a professional trip to Dubai, brought me back some camel’s milk cheese. Besides the slightly sweet taste, it is close to fresh goat cheese, not creamy but very smooth. This cheese keeps very well and is easily dried. First of all, camel’s milk is very digestible and less fatty milk that is easily assimilated and does not cause known allergy problems because it does not contain lactose.
On the other hand, it contains proteins “with high antimicrobial potential”, absent in cow’s milk. It is particularly rich in polyunsaturated fatty acids (the good ones) and in vitamin C (3 times more than cow’s milk). The protein content of camel’s milk is similar to that of cow’s milk between 2-5% protein . However, it contains a bit more essential amino acids like methionine, valine, and leucine. Camel’s milk is a little less fat (2 to 5%) than that of cow’s milk and in addition, it contains more unsaturated fatty acids.
On the micronutrient side, camel milk is rich in iron and it is a good source of vitamin C : it contains 3 times more than cow’s milk. It is also rich in lactoferrin , an antimicrobial protein, which slows down bacterial growth. Camel milk contains 2-6 mg / mL and cow milk contains 0.02-0.2 mg / mL. It also contains more lysozymes -a protein that can attack certain bacteria: 15 g / 100 mL compared to 7 g / 100 mL in cows.
Moreover, many health claims resulting from cultural beliefs represent camel milk as more beneficial to health than cow milk.
